Recipe: Sunflower Shoot Salad with Lemon Vinaigrette

- 2 cups sunflower shoot microgreens

- 1 cup cherry tomatoes, halved

- 1 small cucumber, sliced

- 1/4 cup crumbled feta cheese

- 1/4 cup sliced red onions

- 1/4 cup toasted sunflower seeds

For the Lemon Vinaigrette:

- 2 tablespoons freshly squeezed lemon juice

- 1/4 cup extra-virgin olive oil

- 1 teaspoon honey

- Salt and pepper to taste


1. In a large salad bowl, combine the sunflower shoot microgreens, cherry tomatoes, cucumber slices, crumbled feta cheese, red onions, and toasted sunflower seeds.

2. In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper until well combined.

3. Drizzle the lemon vinaigrette over the salad ingredients in the bowl.

4. Toss the salad gently to coat the ingredients with the dressing.

5. Let the salad sit for a few minutes to allow the flavours to meld together.

6. Serve the sunflower shoot salad immediately as a refreshing and nutritious side dish or light meal.
